What’s for Lunch? The Amazing Sandwich

You won't believe it until you try it.
Ok, I admit that this combination sounds like it would be awful, but it’s really not! There’s something about combining egg salad and tuna salad that transforms them both. If you don’t like one or the other I would suggest you still try this. It’s something completely different and amazing.

I have to say I like both egg salad and tuna salad, but together? Believe me, I was incredulous too when I first heard of this.

I first encountered this sandwich in the cafeteria where our office used to be located. They had many good things on the menu, one of which was they made your sandwich for you while you stood in line. They even sliced the bread only after you ordered. There’s nothing like completely fresh…

I often went down and bought a sandwich for lunch. They were delicious, fairly inexpensive and the fresh baked bread was sliced thick. It certainly gave you the energy you needed for the afternoon.

One time when I was standing in line a lady in front of me asked for half tuna salad and half egg. The person behind the counter started to make two half sandwiches but she stopped him. “No”, she said, “not two. I want them together. And do you have any black olives?”

The words hit me like a thunderclap. How weird was that request. She must have seen me with my mouth open because she said “It’s really good. You wouldn’t believe it.”

Well, it was just one lunch, so being brave I piped up “I’ll have what she just ordered.” Wow, what a revelation. The tuna is made less “tuna-y” by the egg salad and also more creamy somehow. The black olives add a nice, well, olive-y taste that is just amazing.

If you’re afraid of the egg/tuna combo warm yourself up by having a tuna/olive tapenade sandwich. You’ll start to understand what I’m talking about.

Ever since then this has been my favourite sandwich and that was at least 10 years ago. You should try it, once. The fillings aren’t mixed together so if you think it’s horrible you can just make regular egg salad and tuna salad from the remaining filling.

But I bet you won’t…


The Amazing Sandwich
Makes 4 regular sandwiches or 2 really good ones
1 can of white tuna, packed in water
3 hard boiled eggs
1/2 cup mayonnaise
1 small onion
salt and pepper
3/4 cup chopped black olives
bread (I had ciabatta)

Chop the onion very finely and divide into two small bowls.

To one bowl and the tuna and to the other add the 3 eggs, with shell removed of course.

Divide the mayonnaise between the two bowls and sprinkle each with salt and pepper. Mix both fillings well, mashing the egg with a fork.

Take two pieces of bread and lay side by side. Spread one slice with egg salad and the other slice with tuna salad.

Chop the black olives and arrange some on top of one of the fillings. Top with the other and cut if desired.
